Paleo Shrimp Salad
You know I love me some Paleo-style eating and living.

Shrimp salad
paleo, gluten-free, super healthy
Serves 5 to 7
- 1 lettuce of your preference ( i suggest curly endive or butter) washed and in bite size pieces
- 1 avocado in slices
- 1 lb medium shrimp boiled in salted water for 8 min and cooled in ice water
- 1 mango in small cubes
- 1 cup organic corn
- 1 cup cherry tomatoes
- 1 cup orange wedges
- 1 cup arugula
- 3 tbsp black and regular sesame
- Arrange on plates as desired
Dressing
- 1/2 cup mirin or vinegar rice
- 1 cup olive oil
- 2 tbsp dijon mustard
- 1 tsp sesame oil
- The juice of one orange
- Salt n pepper to taste
Mix all ingredients in a mason jar and shake shake shake.

Berries on Snow – Paleo Dessert

Paleo dessert:
Makes 8 to 10 small servings
1 lb. cleaned diced strawberries
1 lb. washed blackberries
1 lb. washed blueberries
1 can coconut milk
Pure stevia 1 tsp or raw honey 2 tbsp
Cinnamon 1 pinch
Chia seeds 4 tbsp ( optional)
Star fruit for garnish
Cool coconut milk 1 hour, pour in a big bowl and stir with an electric mixer until thick and add honey.
Serve mixed berries in cups or glasses
Pour thick cream on top, sprinkle cinnamon and chia.
Enjoy!

Easy Cranberries, Apple, Feta Chicken Salad
If you’ve heard me talk, you know I don’t cook much or like to spend a lot of time in the kitchen…
Mostly, because I just eat as I go and I don’t like waiting for my food! Ha! I eat half the meal by picking before it gets cooked!!
Here is an almost “instant” meal that I make for dinner sometimes and its great this time of year!
Recipe:
1 bag of pre-made salad or spring mix
1/4 c. feta
1/4 c. dried cranberries
1/4 c. chopped pecans (or walnuts)
1 chopped apple (fuji, honeycrisp, or granny smith)
Mix and serve with leftover turkey or rotisserie chicken

Workout Clothes– when you’ve been working out as long as I have, you realize that a brand spankin’ new workout outfit can make you have the best workout of your life! Seriously! I used to just think “Oh I’m going to get sweaty anyway” and just wear scrubs to the gym… but I got the cutest workout top and pants from a friend.. and man! Nothing like a feeling of looking good to feel good! Here are a few of my favorite brands (and a little less $ but cuter (in my opinion) that Lululemon)
MPG (Mondetta Performance Gear)– This is great gear for runners, yoga peeps, weight lifters and group exercisers. Just good quality and I LOVE the colors and how they change it up each season.
WOD Gear– I’m totally into Crossfit, even though I don’t belong to a box. These are super cool clothes for the crossfitter (and just cool chick) in your life
Lorna Jane Activewear– OK I was visiting in Marina Del Rey and just walked into a Lorna Jane Store. I had vaguely seen the brand before, on Instagram, but I fell in LOVE after really seeing their stuff. OMG–> Seriously, Lulu just needs to go. Not only do they have fun colors, styles, etc. but I LOVE the brand message: MOVE, NOURISH, BELIEVE.

Gym Bags- Hello!! The one thing I love to have besides cute workout gear, is a cute gym bag! It makes carrying my jumprope, workout papers, towel, water and ID much more fun. (and stylish) Here are two really cute ones:
oGorgeous– these bags are to DIE for. Seriously. I am lucky enough to call the designer, Cassey, my friend, and I saw how much work she puts into each bag.. insane. The quality is amazing, they are lined, have cool zippers and pouches where you need them and are cute in and out of the gym (Mine has become my day to day purse. LOL) Great for yoga mats too!

Eco-Friendly Re-usable Water Bottle– I found this cool water bottle on the Egg Whites International site. You can private label them (A SB Bottle??) but they are carbon filtered, so you can fill your water up anywhere and have safe, clean water! Great for the environment and travel!
TRX System- this is a cool ass gift– a little pricey and I’m totally glad I WON mine. A must-have for the hardcore at-home gym person. These are so great for creativity, core, balance and strength

Dry Shampoo- this is the workout girls dream. I swear. You just can’t wash and style your hair every day because you’re sweaty. It just wrecks it (plus who has time?!) Blow dry your sweat out, spray this is to tame the grease and it smells amazing! You won’t want to wash for a week! LOL BONUS: Under $5
Socks- I’ve been getting socks for years for Christmas. Nothing like a cute pair of fun lifting or crossfit socks. I love these socks from Sox Box they have all different colors and fun words!
Jump Rope- I’ve bought plenty of jump ropes in my day. I used to try and find the cheapest ones I could, which were still around $7.99 and buy about 10 of them for my group training classes. Unfortunately these things would break after just a few uses and I’d end up pissed! I finally broke down and decided to pay a little more for a rope and honestly, it was a great investment. Ever since the May Jump Rope Challenge I’ve gotten to be a better jumper, plus, you can take your cardio with you anywhere. Here is a cute pink rope (its the one I got!)
Headbands– I’m going to do a shameless plug for my own personal “I am a Sweaty Betty” Sweaty Bands.. but honestly, Sweaty Bands are the best invention in head bands, ever. I love throwing my hair in a pony tail, throwing on one of my three (and hopefully soon to be more) Sweaty Bands and just go! They are so cute, easy and don’t slip! They have sooo many, you’ll want at least … well.. half a dozen. LOL
Sin<less Cocktails– I’m not a big drinker. Once in awhile (like once or twice a year) I like to have a drink, but I hate the calories and I’m totally a sweet, cocktail girl. So, I was soooo excited to find this brand who not only makes a low-calorie cocktail mix, but they do it with stevia and other healthier ingredients– TOTAL QUALITY. Seriously, read their “about us” page and you’ll love the company as much as you do the drinks. Anyway, they have a LIMITED HOLIDAY MIX of flavors, including: green apple, vanilla sour, and cinnamon! YUM!
Steamer Veggies Review
I’m often asked to review different products on this page; from gadgets & doo-dads, to different diet shakes & energy formulas, but when I was asked my Green Giant to review their Seasoned Steamers™ vegetables in October, I thought, What perfect timing! It’s the month of our JERF Challenge (Just Eat Real Food) and I am realizing how often it’s just inconvenient, to get real food prepped, cooked and seasoned to taste good!
I’ve said this many times: I am not a cook. I have definitely been trying new recipes and new methods lately, but some days I still go to my old pal the microwave so I can heat up something quick and easy.
I’ve actually bought frozen veggies many times; they’re convenient and are always in season! The Green Giant® Seasoned Steamers™ however, had a nice– already seasoned flavor, so they were ready to eat. The ingredients were simple; a little but of sea salt, pepper and olive oil.
I don’t like to make complicated recipes, so throwing the bag in the microwave, some rice in the cooker and some turkey on the stove to brown (not pictured) and I had a simple tasty dinner. This is something that I can do anytime and I love that there are six different blends to choose from!

Spicy Thai Coconut Peanut Chicken
Spicy Thai Coconut Peanut Chicken Crock Pot Recipe
(This recipe was sent to me by my sister-in-law from www.bhg.com and modified by me)
If anyone has seen any of my interviews, you know, Thai food is my favorite cuisine! Anything with coconut, curry, and peanut sauces, I’m there! This one has it all!! Eat alone or over rice (brown, white or jasmine) It has a great dose of healthy fats and is so yummy on a cool fall evening.
Makes: 6 servings
Prep: 30 mins.
Cook: 5-6 hrs (low) 2-3 hrs (high)
Ingredients:
1 medium white onion chopped into wedges
1 cup julienned or quarted baby carrots
1 medium red pepper cut into bite-sized strips
3 lbs. chicken breast cut into chunks (approx. 4-6 breasts)
3/4 c. chicken broth (*I used low-sodium broth)
6 tbsp. natural peanut butter (I used chunky)
1/2 tsp. grates lime peel
2 tbsp. lime juice
2 tbsp. soy sauce (low-sodium) OR Bragg’s Liquid Aminos
2 tbsp. quick-cooking tapioca
1 tsbp. grated fresh ginger
2-3 tsp. red curry paste
4 tsp. minced or chopped garlic
1/2 c. unsweetened coconut milk
1 cup frozen peas
For garnish:
chopped peanuts
snipped fresh cilantro
Directions:
1. Chop carrots, onion, red pepper and chicken—> throw in crock-pot
2. In a medium bowl, whisk together: chicken broth, curry paste, peanut butter, lime juice & peel, garlic, ginger, soy sauce, and tapioca.
3. Dump mixture on top of veggies & chicken, coat and set heat to low for 5-6 hrs. or on high for 2-3 hours
4. When the chicken is done, add 1/2 c. coconut milk and 1 cup peas. Leave it covered for 5 more mins.
5. Scoop and serve over rice or with veggies— garnish with peanuts and cilantro
